Ingredients:
1 ¾ cup, (10 tablespoons) unsalted butter, softened to room temperature
1/2 cup coconut sugar
1 1/2 teaspoons pure vanilla extract
3 tablespoons arrowroot flour
1/2 teaspoon baking powder
1 ½ cup all-purpose flour
1/2 cup World of Chia Fruit Spread, flavor of your choice
1. Preheat oven to 375ºF and line baking sheet with parchment paper.
2. In the bowl of a stand mixer or using a hand mixer on medium speed, cream butter and sugar together until smooth and creamy. Mix in vanilla and beat until combined, scraping down the sides and the bottom of the bowl as needed. Turn mixer off then slowly add in arrowroot flour, baking powder and flour.
3. Turn mixer back on low and beat until the dough starts to crumble and clump together. Turn mixer off and scoop dough with your hands into 1-inch balls and place 1.5 inches apart onto prepared baking sheets. Use your thumb or 1/4 teaspoon to make an indentation in the center of each dough ball. Place 1 teaspoon of Chia Fruit Spread in the center.
4. Bake for 10-12 minutes. Cool for 5 minutes on the baking sheet then transfer to a cookie rack to continue cooling.
